Bacon “Creamed” Spinach Paleo Recipe

This recipe seeks to replace the traditional cream fat with bacon fat, achieving a “creamed” texture while complying with Paleo ideals. The additional use of balsamic vinegar makes a dish that tastes like an deconstructed slow-motion salad dressing. 

Paleo Bacon "Creamed" Spinach

Ingredients

16oz Frozen Spinach
1/2 lb Bacon (smoked preferred, not lean)
2 Tbsp Balsamic Vinegar

Directions

Bake the Bacon, in a pan, in the oven for 40-50 minutes at 350f;
Microwave the Frozen Spinach per bag instructions (typically 8 minutes on high in a covered container)
Combine Bacon, Bacon Drippings, and Frozen Spinach
Add Balsamic Vinegar to taste
Stir and rest for 3 minutes before checking to add salt; It is likely not needed.
